Special WPMU Plugins

http://wpmudev.org/plugins.php contains a listing of some special plugins for WPMU. These provide a unifying context so that the multiple blogs make sense.

The wpmudev.org site does not allow users to arbitrarily edit any page (like it would if it was a wiki). Like blog sites it does allow commenting on some of the pages.

Regular WP Plugins

Most regular plugins do work with MU, so the popular opinion is that there is little point keeping a list of the ones that do work.
